Tomato Chutney


Ingredients
8 oz. tomatoes 
1 onion 
2 tablespoons vinegar 
2 teaspoons chilli powder 
salt to taste 
1 teaspoon sugar 
2 tablespoons oil 
½ teaspoon mustard seeds sprinkle with salt 
Method
Scald, peel and chop the tomatoes finely. Chop the onion and combine with the tomatoes. Place in a bowl with the vinegar, chilli powder, salt and sugar. Heat oil in a pan and fry mustard seeds. As soon as they change colour combine tomato mixture with the remaining ingredients and simmer until chutney thickens. Bottle when cool.
